Hello guys.
It’s this menu you can think of when the weather is getting cold. I’m going to try out a really good sukiyaki place! As you can probably tell from the background,
I’m in Shibuya today! It’s about a 15-minute walk from Shibuya Station,
so I’m going to take my time and walk over. I’m at the Hachiko Exit right now,
and this whole area is under construction! You might be thinking, “Does Shibuya Station ever NOT have construction going on?!” But apparently, this is all because of a massive redevelopment project that only happens once in a century. Shibuya’s massive redevelopment has been underway since 2012! It’s a long-term project so major that people call it “a once-in-100-years transformation,” and it’s scheduled for completion in 2034. They’re currently working on connecting all four directions, east, west, south, and north, on this level, so once it’s finished, you’ll be able to walk in any direction without any obstacles. So yeah… Shibuya Station construction never seems to end. Something I found personally funny was this moment on a variety show where someone asked, Something I found personally funny was this moment on a variety show where someone asked, “When will the Shibuya Station construction finally end? ” And the MC replied, “Shibuya Station is basically Japan’s Sagrada Família.” 😂 *Sagrada Família = A famous church in Spain that started construction in 1882 and still isn’t complete today.
After hearing that, I was like,
“Alright… I’ll just enjoy waiting for it to be finished someday.” So let’s just think of Shibuya Station as our own
Sagrada Família and wait patiently, I guess! The place I’m heading to today is in this direction from the Hachiko statue! Just walk straight toward the Mark City building. Then go into the back alley behind Mark City and walk up the hill! If you don’t like uphill walks, you can also come down
from Shinsen Station instead. Today’s restaurant is Sukiyaki Chikayo~ **Just a note: they only accept card payments,
so keep that in mind!** What do you guys think of the vibe here? Most sukiyaki restaurants are really traditional, but this place feels modern and casual. So I think younger people will feel comfortable coming here too. All the seats are counter seats, . so if you like eating alone
as I do, this place is perfect And the owner cooks the meat right in front of you, so he tells you exactly when it’s at the best moment to eat it. The owner said he’s okay with being on camera,
so here he is, the star of today’s episode! – Here’s the menu~
– Please take good care of me! We’re a sukiyaki restaurant that specializes in meat,
no vegetables. We have three different sets, and each set comes with meat, rice, aka-dashi miso soup, egg, and tsukemono. Ah~ aka-dashi miso soup!
(*A soup made with deep red miso, which has a stronger, saltier, and more savory flavor than regular miso soup.) – This is the mini size,
and the one in the middle is the regular size.
– Even the regular bowl is pretty big! – Today’s premium set comes with two slices of meat
– Wow~ that looks great! Then I’ll have the premium set, please Yes, premium set for you. I love that they actually show the sizes like this. I usually imagine like… “maybe it’s about this big?” or “maybe like that?” but this place is so honest and straightforward such a trustworthy restaurant..! Guys, the aka-dashi miso soup is here first,
and the smell is fantastic! Let’s crack the egg, shall we?! (Look at that beautiful yolk ♥️) The owner even taught me how to mix the egg properly 5–6 times! 1, 2, 3, 4, 5, 6. Oh~ perfect~~ Finally, it’s meat time!! We will season it with sugar and soy sauce. – Oh~ this is Kansai-style, right?
– Yes, that’s right We use sugar and soy sauce as the base seasoning,
but each restaurant does it a little differently. – Some places use sake, dashi, or mirin instead.
– Oh, I see! Our restaurant name, Chikayo, is my mother’s name, – and I recreated the exact flavor of the sukiyaki
she used to make at home.
– Oh, so this is your mother’s recipe! – I’m 40 this year.
– Oh, you look so young! I still can’t eat vegetables very well,
so even when I eat sukiyaki, I only eat the meat. – So naturally, that led to creating a meat-only sukiyaki restaurant.
– Aha~ so that’s the story behind it! Haha. – And this pot..
– do you change it every time? – Yes, we switch it out each time.
– Wow, that’s impressive! With yaki-suki, the aroma from grilling the meat and fat is important, – but the real highlight is that slightly caramelized smell from the sugar and soy sauce sticking to the pan.
– Oh yes, that’s the best part! But since it naturally produces a lot of moisture… – Ah, so when the pan gets watery, you switch to a new one..!
– Yes, so we can grill again properly. Wow~ it requires so much work, but you can really feel the care and dedication! I love the craftsmanship! Wow, this looks amazing~!

Mmm~ (slowly savoring…) It’s so good! The meat is incredibly tender; it just melts. This place serves Kansai-style sukiyaki! In Japan, sukiyaki is usually divided into
Kansai style and Kanto style. Kansai is the Osaka region, and Kanto style is the Tokyo region. My family back home makes Kanto-style! Kansai style
→ Heat the pan first and grill the meat, then season it directly with sugar and soy sauce. It creates a sweet-and-salty flavor. Kanto style
→ Boil the broth first, then add the meat and vegetables
so everything absorbs the flavor together. And honestly, the Kansai method makes sense. Since you’re enjoying only the meat, there’s no moisture coming from vegetables, so the meat stays in its absolute best condition… perfect texture. It’s so simple, so the pure beef flavor really hits you. And even the rice is delicious..!
Eat meat, then rice~ best combination. As you saw during the cooking, they sprinkle sugar and soy sauce directly on the pan, so this totally makes you crave rice,
and I bet this goes perfectly with beer too! I’m so happy~~ In Kanto style, you usually use beef as the base, but sometimes you might think,
“Maybe I’ll try it with pork today?” But in Kansai style, they say you must use beef;
absolutely no other meat allowed! I was curious about something,
so I asked the owner a few questions 🙋♀️ When I asked about today’s meat, (a high-grade wagyu known for its tender texture and rich flavor)
he told me it’s Hitachi-gyu from Ibaraki Prefecture. (He actually consults with a butcher and selects the best cuts every week 👀)
You can really tell he puts a lot of thought into choosing the meat! I also heard the thickness of the meat is 2.9 mm. I wondered, “How did he decide on that thickness?” And he said this is the exact thickness that
lets you enjoy the full flavor of the beef. If it were even thicker, it would become a steak,
so this is the sweet spot! And here’s the funny part: In Japanese, 2.9
can be read as ni–ku, which sounds like “meat.” It’s kind of like a dad joke, but cute hahaha. He said 2.9 mm just happened to be the perfect thickness, And it coincidentally turned into “niku.” Typically, at traditional sukiyaki restaurants, the meal takes about 60–90 minutes – and usually costs around 15,000–20,000 yen, right?
– Yes, exactly! So sukiyaki tends to feel like something that takes time, and if you want a really good cut of meat,
it becomes an expensive meal which makes it hard to enjoy casually. But this restaurant took all of that into consideration. And created a system that lets you enjoy sukiyaki comfortably and without stress, which is especially great for travelers! (Sizzle sizzle) The meat grilling in the pan looks
and smells so good… 🤤 And this made me really happy as someone from Niigata:

match the size of the meat! The reason is that when the pan is filled with meat and has no space left, it looks even more appetizing, so they researched down to that level of detail. And here’s something even Japanese people find interesting! (上を向いて歩こう) There’s a song called “Ue o Muite Arukō”, which literally means “Let’s walk while looking up.” (It reached No. 1 on the Billboard Hot 100 in June 1963)
It actually hit No.1 on the Billboard Hot 100. But since the Japanese title was too long, people overseas decided to rename it. It uses the Japanese food name they knew best, Sukiyaki! So outside Japan, this song is known as “Sukiyaki.” But the lyrics have absolutely nothing to do with sukiyaki… lol. Still, doesn’t that show how famous
sukiyaki is worldwide as a dish?! Now I only have the miso soup left…

Guys, look, I really finished everything! It was delicious! How was today’s Shibuya sukiyaki episode with me?! Even as a Japanese person, the concept of this restaurant felt really fresh, everything made sense, and I loved it! The lunch price might seem a bit high at first, but considering the quality of the meat, it’s definitely worth it. If you want to enjoy excellent beef in Shibuya,
I highly recommend this place! And you guys between Kansai-style and Kanto-style sukiyaki,
